Breakfast Taquitos
So easy to put together and they tasted great.
Wow you guys, it has been a long time since I actually tested a breakfast recipe! I realized during my holiday “break” that I have spent 7 days a week up here at my desk. By the time I make it downstairs Joe is starving so I have to throw a sandwich or something at him right away. I’ve decided that I need to try to make a point of unplugging on Sunday to spend more time with Joe, relax a little and get some more breakfast recipes tested so I can share them.
These Breakfast Taquitos that I saw on Pinterest looked like a great way to put together a quick and easy breakfast because, of course I spent a good portion of the morning at my desk. Unplugging is a work in progress but I am hopeful that I will get there someday.

Breakfast Taquitos

Y’all I didn’t have much of anything from the original recipe so I just grabbed what I had in the fridge and got started. I used eggs, some green onions and leftover cooked bacon from Chicken Bacon Quesadillas the day before.
I beat the eggs with a little heavy cream and poured them in a skillet with more melted butter than I care to admit to, then I dumped in the bacon and green onions.

I scrambled the loaded eggs and then put some on a flour tortilla, it’s what I had y’all, and added a little (ok, maybe a lot) of cheese on top.

The hardest part was trying to roll these up as tightly as I wanted to. They were still a little loose when I was done but I was getting hungry and didn’t really want to keep messing with them.

I threw them in the oven for 10 minutes. I think next time I might take them out a little earlier, the tortillas were a little crunchier than I hoped for. Maybe because I used flour tortillas instead of corn?

They turned out great, a little dry inside but next time I think I will add some Homemade Picante Sauce after the cheese before I roll them up. That should fix it and add some really great flavor. We dipped them in sour cream and that helped a lot.
I love how easy these were to make, they were also incredibly satisfying so I will definitely try them again. What would you put in yours before you baked them? Leave me a comment and tell me all about it, I would love some more ideas!
