Quick and easy, I love these Breakfast Burritos.
Breakfast Burritos
Good morning y’all! This is my last full day in Portland and it will still be morning when I post this. It has been a great trip, my mama had a great celebration for her birthday (more than one, actually!), I got to see my grandparents and my cousin who tells me that the last time I saw her was 1988. Her last impression of me was that I was the cool cousin from California who introduced her to Will Smith’s music. That was probably better than this time since Auntie Fran tells me I was being weird and telling stories that made me sound bad. Yep, I can always count on my minion to tell me when I am being a lunatic
One of the things about being vacation is that I can eat breakfast in the morning without being sick. As much as I love breakfast, I can’t usually put anything other than coffee in my system before noon. At home when I finally make it into the kitchen to eat I don’t have a lot of time to make anything. These Breakfast Burritos are the perfect solution, they are quick, so easy to make and they taste amazing. I usually make them a couple of times a week and Joe requests them for breakfast on the weekends a lot. I never get sick of them, they’re so filling and keep me going for the rest of the day.
Ready?
I get the skillet warming to a medium low heat while I peel and dice the potato. I add some salt and pepper to the potatoes, throw a little oil in the skillet (just a quick glug) then dump them in. I stir them up then cover the pan with a lid and wander around doing some clean up and getting the rest of the ingredients ready while I wait. I stir them every so often for about 20 minutes until they are cooked through then toss in the ham, onions and eggs.
I stir the whole mess together and cook them until the eggs are scrambled. In a few minutes, I have a yummy concoction that I dump on a tortilla.
I like to add some cheese, Picante Sauce or Salsa and sour cream to add some more yummy flavors.
There might be an argument made that I make this so I have something to cover in cheese but that would just be silly, right?
Y’all these are one of my favorite meals. I love the combination of flavors and with all the protein it really keeps me going and gives me lots of energy to get through the rest of the day.
