This month for #blogfilmfood I tried a new method of making omelettes. Quick, easy and sort of terrifying but so tasty, these are a perfect quick breakfast!

Y’all this month we’re talking about Julie and Julia. I’d never seen the movie before and didn’t know much about it. I had no idea how much I would relate to it, there is a scene that Julie drops a chicken, the stuffing flies all over the place and she flops on the floor and has a meltdown. Been there, done that. I had to pause the movie and step out of the room so I could breathe for a few minutes because watching it brought back that feeling. Weird, right?
I decided that in the spirit of the movie, I was going to test a Julia Child recipe. I made a trip to the library and checked out a copy of Mastering the Art of French Cooking and went through it to find something. I had half a dozen on my short list and some were fairly complicated. I checked YouTube and found the actual shows demonstrating the recipes and narrowed my list down to 3.
Within 5 minutes of starting The Omelette Show I knew this was the one.
I showed Joe and his eyes got huge and terrified…apparently he thinks I’m clumsy or something and that this would end badly. In the back of my mind I was pretty sure he was right, but I would never admit that and since the challenge was made there was no way I was backing down.
Ready?
This isn’t a complicated recipe, a few eggs and a little whipping cream (I prefer to use that in eggs rather than water, it makes them a little fluffier) thrown into a pan on some melted butter. How hard could it be, right?

The first two I left plain so I could get the hang of it and then I threw in some ham and cheese.

OK, the hard part is in the technique. Flipping an omelette around in a pan to roll it up takes some work and trying to find the right temperature was sort of hit or miss. I had 8 eggs in the house and I used them all before I finally got it exactly right (My dogs were thrilled with this experiment because they got to eat the “bad” ones). Joe hovered around and offered unnecessary and annoying help, flinching every time I tried to flip them around.

Y’all, I did it! Not one of them flew out of the pan and landed on the stove or the floor and we had some really yummy breakfast. It might have been yummier because I got to tell Joe “I Told You So” about 600 times while we were eating. The only thing I needed to change for the next time was to add the cheese after they were done cooking. I like mine cooked through and when I flipped them the cheese got sort of crunchy from sitting directly on the heat.
I restocked my eggs and now I’m eating these just about every day. They take a couple of minutes and taste so good! The eggs are fluffy and done just right and now that I have the hang of it takes no time at all. Of course, now that I’m flipping these around I’ve gotten into the habit of trying it with other stuff too and not all of that has stayed in so well. Don’t tell Joe!
