Easy Breakfast Casserole for #blogfilmfood

Y’all this month we watched Beetlejuice for #blogfilmfood. I know that sharing a Breakfast Casserole to go along with this movie is a little odd but it seems like exactly the sort of thing that the Maitland’s would eat for breakfast before heading out on the last errand they would ever run, don’t you think? I was tempted to grab a frilly apron while I was throwing it together but settled for singing “Day-o” at the top of my lungs and dancing around the kitchen instead. I’m sorry to tell you that Joe didn’t appreciate my recreation of my favorite part of the movie. If you don’t have any idea what I’m talking about, here it is:

You guys, this is so easy! I thawed a bag of frozen diced hashbrown potatoes in the fridge overnight then threw half the bag in the bottom of a buttered disposable aluminum pan (have I mentioned how much I love those?) with about a cup of diced ham, 1/2 cup cheese and some finely diced onions.

I threw 8 eggs in a mixing bowl with about 1/2 cup of milk and whisked them up. I wouldn’t recommend dancing around with the bowl and whisk in your hands, the egg mixture is pretty sloshy and isn’t at all comfortable to wear. Not that I would have any personal experience with that because that would just be silly, right? (Ahem)

I stuck my hands in the pan and flopped the potatoes, ham, cheese and onions around so they were combined then dumped the eggs over the top.

I threw it in the oven for about half an hour until the eggs were almost completely cooked through. I pulled it out, dumped another half cup of cheese over the top and threw it back in for another 10 minutes to melt the cheese and to make sure the eggs were really done.

I was so happy with how it turned out. Full of potato and ham chunks with some onion and enough cheese to make even me happy, y’all are definitely going to want to try this. This is a really flexible recipe and you can throw whatever makes you happy in the mixture. I love picante sauce and sour cream on top of my food so I tossed it on and dug in.

Although Joe was not excited about what he called my “flailing around and screeching” while I made it, he did love the way it turned out and has his request in for me to make it again next weekend!

Easy Breakfast Casserole for #blogfilmfood

Ingredients

  • 1 tbsp butter
  • 1/2 bag (32oz) diced hashbrown potatoes, thawed
  • 1 cup diced ham
  • 1 1/2 cups shredded cheddar cheese
  • **Additions to taste (I used some diced onions)
  • 8 eggs
  • 1/2 cup milk
  • salt and pepper to taste
  • 1/2 cup cheese

Instructions

  1. Mix potatoes, ham, 1 1/2 cup cheese and any additional ingredients and spread across the bottom of a buttered 9x13 pan.
  2. Whisk eggs, milk, salt and pepper together and pour over the top of the potato mixture.
  3. Bake at 375 for 30 minutes until eggs are cooked through.
  4. Sprinkle 1/2 cup shredded cheese over the top and bake for an additional 10 minutes.
  5. Cool for a few minutes, cut and enjoy!
